Low- Fat Raspberry Pomegranate Vinaigrette

It’s hard to find a good low fat dressing that doesn’t taste like poo. I mean a good vinaigrette is usually just as high in calories and fat as ranch and people think they’re being healthy but going with the vinaigrette. In some ways this is a better choice but in the end fat is fat and a calorie is a calorie.

So I came up with this delicious sweet dressing that’s perfect for a summer berry salad! Which I’ll post a recipe for next Thursday so keep an eye out for that.

Raspberry pomegranate dressing

Here’s the recipe

3/4 cup of Apple Juice

1/4 cup of fresh raspberries

1 tablespoon of pomegranate red wine vinegar

1 tablespoon extra virgin olive oil

1/2 teaspoon of lemon juice

1/2 teaspoon of chia seeds

1/4 teaspoon of xanthan gum (to thicken it otherwise it’s really runny and pools at the bottom of your salad)

a pinch of himilayian pink salt

 

Blend and enjoy on a fresh salad! You can get xanthan gum at most health stores. You’ll only need a small amount so no need to buy a large bag of it. Let me know what you think of this dressing!
